Charter Experience: Locally-Caught Seafood
When seafood-loving guests requested locally caught fish on their charter with Catamaran Physalia, Chef Kaya was delighted to make it happen. Through a trusted local fish monger, she obtained a beautiful blackfin tuna. Skilled in fish preparation, Kaya cleaned and filleted the tuna, then served it with a guava reduction and locally grown microgreens. Local doesn't get much better–or fresher–than this! |
